This is whats for dinner!!! Tonight!

If you read this blog, you need to make this dinner. If you think it sounds gross, you need to try it anyway. If you hate squash and zuchinni, substitute broccoli or eggplant (eeeww!) or potatoes or carrots or whatever. I found this on literally, a spoonful. She found it on Fly Through My Window. And it is GOOOOOOOD! And it literally takes 7 minutes of prep and 35-45 minutes to cook. Easy Peasy! And you need easy, right!? Right?!

Here's what you'll need:

Thin sliced chicken cutlets
Olive Oil
Salt
Pepper
Squash
Zucchini
Marinara sauce
Italian 6 cheese blend grated
Tin foil

Here's what I did, and it turned out delish!
Preheat the oven to 350 degrees. Cut as many pieces of foil as you have chicken cutlets. Place one chicken piece on each piece of foil. Drizzle a little olive oil on top and then sprinkle with salt and pepper. Lay some squash and zucchini slices on top of that, then a big spoonful or two of marinara and then some cheese. Tent the foil so the cheese doesn't stick. Stick those bad boys in a pan, then the pan in the oven. Go check your email, facebook, or whatever for 15 minutes. Then come back so you can boil some water to make angel hair pasta. When the pasta is done and the chicken is done (about 40 min after placing in the oven) serve it up!!! It is so easy, so delicious and even Art ate it, squash, zucchini and all! I think EK Doug also ate it. And of course H ate it, she eats anything, including raw red onion, steamed broccoli, and straight up butter. She rules!!!
